  • 1 pound chicken breast, cut into bite-sized pieces Use boneless, skinless for best results.
  • ½ cup sweet chili sauce
  • 2 tablespoons soy sauce Use low-sodium version for less sodium.
  • 1 tablespoon lime juice Adjust to taste.
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch (optional, for thickening) Mix with water to create a slurry.
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish

Preparation

  • In a bowl, combine sweet chili sauce, soy sauce, lime juice, and minced garlic. Set aside.
  • Taste the sauce before adding to the chicken. Adjust lime juice or heat if desired.

Cooking the Chicken

  • Heat vegetable oil in a skillet over medium-high heat.
  • Season chicken pieces with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 5–7 minutes.
  • Avoid crowding the pan; cook in batches if needed.
  • Pour the sauce over the chicken and stir to coat evenly.
  • If desired, mix cornstarch with a little water, then add it to the skillet to thicken the sauce.
  • Cook for an additional 2–3 minutes until sauce is sticky and coats the chicken.
  • Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For meal prep, cook chicken and sauce separately to preserve texture. Use a heavy-bottomed skillet for best caramelization.
