  • 1 pound chicken breast, cut into bite-sized pieces
  • ½ cup sweet chili sauce Check for gluten-free if necessary.
  • 1 tablespoon lime juice Adds brightness to the sauce.
  • 2 tablespoons vegetable oil For cooking the chicken.

Preparation

  • Pat the chicken pieces dry with paper towels and season lightly with salt and pepper just before cooking.

Cooking

  • Heat 2 tablespoons of vegetable oil in a large skillet over medium heat until shimmering.
  • Add the seasoned chicken pieces in a single layer and cook undisturbed until the bottoms are golden brown, about 2-3 minutes.
  • Flip the chicken and continue cooking until cooked through, about another 3-4 minutes.
  • While the chicken cooks, whisk together 1/2 cup sweet chili sauce and 1 tablespoon lime juice in a small bowl.
  • Pour the sauce mixture over the cooked chicken, stirring to coat evenly.
  • Reduce heat to low and let the sauce simmer for 2-3 minutes until heated through and slightly thickened.
  • Turn off the heat and sprinkle chopped green onions over the top before serving.

Notes

For deeper flavor, consider marinating the chicken in a touch of soy sauce or garlic powder. Store leftovers in an airtight container for up to 3-4 days. Freeze for up to 2-3 months.
