Ingredients
  

For the loaf

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 0.5 cups buttermilk
  • 0.25 cups fresh lemon juice (about 1–2 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

For the glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in buttermilk, lemon juice, and lemon zest.

Combine Dry Ingredients

  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients until just combined.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool for 10 minutes before transferring it to a wire rack.

Glazing

  • For the glaze, mix the powdered sugar and lemon juice until smooth, then drizzle over the cooled loaf.

Notes

Use freshly squeezed lemon juice and freshly grated lemon zest for the brightest citrus flavor. If you don’t have buttermilk, make a simple substitute with milk and lemon juice. Powdered sugar for the glaze should be sifted if lumpy.
