  • 4 medium zucchinis
  • 2 tablespoons olive oil for sautéing
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes adjust to spice level
  • 2 tablespoons soy sauce can use gluten-free soy sauce if needed
  • 1 tablespoon sesame oil
  • Chopped green onions for garnish for freshness
  • Salt and pepper to taste

Preparation

  • Wash the zucchinis to remove any dirt. Using a spiralizer, create noodle-like strands. Set aside.
  • In a large skillet, pour in the olive oil and heat over medium heat.

Cooking

  • Add the minced garlic and red pepper flakes to the skillet. Sauté for about 1-2 minutes until fragrant.
  • Toss in the zucchini noodles and stir-fry for 4-5 minutes until just tender.
  • Pour in the soy sauce and sesame oil, stirring to combine everything.
  • Season the noodles with salt and pepper to taste.
  • Remove the skillet from heat and garnish with chopped green onions.
  • Serve hot, optionally topped with grilled chicken, tofu, or shrimp.

Notes

Zucchini noodles are best enjoyed fresh but can be stored in an airtight container for 2-3 days. To freeze, spread on a tray and transfer to a freezer-safe bag after freezing. You can also spiralize the zucchini a day in advance.
