One-Pan Bold Honey BBQ Chicken Rice

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts Halal-certified if needed
  • 1 cup long-grain rice Jasmine or basmati work too
  • 2 cups chicken broth Use low-sodium if preferred
  • ½ cup BBQ sauce Use a halal-friendly brand
  • ¼ cup honey Adjust according to sweetness preference
  • 1 cup mixed vegetables Frozen or fresh; peas, carrots, corn, or a blend
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika Swap for cayenne for heat

Instructions
 

Preparation

  • Pat the chicken dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika. Let rest for 5–10 minutes.
  • If using, let the chicken sit in the fridge for 30 minutes to 2 hours to enhance flavors.

Cooking Chicken

  • Heat a large skillet over medium heat and add a tablespoon of neutral oil.
  • Add the chicken and sear for 4–5 minutes until golden-brown. Flip and sear the other side.

Making BBQ Sauce

  • Whisk together the BBQ sauce and honey in a small bowl until smooth.
  • Pour the sauce over the seared chicken to coat.

Adding Rice and Broth

  • Add rice and chicken broth to the skillet and stir gently to combine.
  • Scrape up any browned bits from the bottom of the pan.

Simmering

  • Bring to a gentle simmer, then reduce heat to low, cover, and cook for about 20 minutes.
  • Ensure the lid is tight to keep steam in.

Adding Vegetables

  • Scatter mixed vegetables on top during the last 5 minutes and cover to steam.

Finishing

  • Let sit off heat for 5 minutes, then fluff rice.
  • Serve chicken with rice and vegetables, drizzled with pan sauce.

Notes

Chicken thighs are juicier than breasts. Store leftovers in an airtight container for 3-4 days. Can freeze for up to 2 months.
