Ingredients
  

Soup Base

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Vegetables

  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup kale, chopped

Liquid and Seasoning

  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 cup chickpeas, drained and rinsed

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat for about a minute.
  • Add chopped onion and minced garlic, sauté for about 3-5 minutes until onion becomes translucent.

Adding Vegetables

  • Stir in diced carrots, celery, and chopped bell pepper, cooking for an additional 5 minutes.

Building the Broth

  • Add 4 cups of vegetable broth and the can of diced tomatoes with their juices.
  • Incorporate chopped green beans, dried thyme, and dried basil, then bring the mixture to a boil.

Simmering

  • Reduce heat to low and let it simmer uncovered for 20 minutes.

Final Touches

  • Stir in chopped kale and drained chickpeas, cooking until kale wilts and chickpeas are heated through.
  • Season soup with salt and pepper to taste.

Serving

  • Ladle soup into bowls, garnishing with fresh herbs if desired and serve with crusty bread.
