  • 5 cups chopped cabbage Fresh cabbage is ideal.
  • 1 cup chopped onions Can use yellow or white onions.
  • 1 cup chopped green peppers Bell peppers can vary in color.
  • 2 cups diced tomatoes Fresh or canned tomatoes work well.
  • 4 cups vegetable broth Use low-sodium if preferred.

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon pepper Adjust to taste.
  • 1 tablespoon olive oil
  • Optional herbs (thyme or basil) Add for extra flavor.

Preparation

  • In a large pot, over medium heat, pour in the olive oil and let it warm up.
  • Add the chopped onions and green peppers to the pot. Sauté them for about 4-5 minutes until they are soft and fragrant.
  • Next, stir in the chopped cabbage. Cook for another 3-4 minutes until it wilts down a bit.
  • Pour in the diced tomatoes and vegetable broth. Give everything a good stir to combine.
  • Add garlic powder, salt, and pepper. Taste and adjust according to your preference.

Cooking

  • Increase the heat until the soup reaches a gentle boil.
  • Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.
  • Towards the end of cooking, if using optional herbs, toss them in a few minutes before serving.

Notes

For a smoother texture, consider blending a portion or the whole batch after cooking. This soup can be stored in the fridge for 4-5 days, or frozen for up to 3 months.
