Ingredients
  

Turkey Filling

  • 2 cups leftover turkey, shredded Use dark or white meat - both work.
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning Store-bought or homemade.

Taco Assembly

  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup cheese (cheddar or your choice)
  • to taste sour cream For serving
  • to taste salsa For serving

Instructions
 

Reheat the turkey

  • In a skillet, heat 1 tablespoon olive oil over medium heat. Add 2 cups shredded turkey and 1 teaspoon taco seasoning, stirring to combine. Cook until heated through, about 3–5 minutes.
  • If the turkey seems dry, splash 1–2 tablespoons chicken or turkey broth into the pan and cover for a minute to steam and soften the meat.

Warm the tortillas

  • Warm the tortillas in a dry skillet over medium heat for about 20–30 seconds per side, or microwave them in a damp paper towel for 20–30 seconds until pliable.

Build the tacos

  • Fill each tortilla with a generous tablespoon or two of the turkey mixture. Top with shredded lettuce, diced tomatoes, and 1–2 tablespoons of shredded cheese.
  • Layer turkey first, then lettuce and tomatoes to prevent sogginess, adding cheese on top to melt slightly.

Add the finishing touches

  • Dollop sour cream and spoon salsa over the tacos as desired.
  • Add extras like chopped cilantro, sliced avocado, or pickled red onions.

Serve and enjoy!
