  • 1 cup unsalted butter, softened Ensure the butter is softened at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (optional) Pecans or walnuts work wonderfully.
  • 1 cup shredded coconut (optional) Use sweetened or unsweetened coconut based on preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs and vanilla extract to the butter-sugar mixture and mix until combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the rolled oats, chocolate chips, and any additional mix-ins.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes.
  • Remove cookies from the oven when edges are golden brown; let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Chill the dough for an hour to enhance flavor and texture; you can also freeze the cookies to keep them fresh longer.
