Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together 1/2 cup of softened unsalted butter and 1/2 cup of erythritol until light and fluffy.
  • Add 1 large egg and 1 tsp vanilla extract to the bowl and mix until well combined.
  • In a separate bowl, combine 2 cups almond flour, 1/2 tsp baking powder, and 1/4 tsp salt.
  • Gradually mix the dry ingredients into the wet ingredients until a uniform dough forms.
  • Roll the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  • Gently flatten each ball with your hand.

Baking

  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes
