  • 2 cloves garlic, minced Adds aromatic flavor
  • 2 tablespoons soy sauce Use tamari for gluten-free option
  • 1 tablespoon olive oil For sautéing
  • to taste Salt and pepper For seasoning
  • Cooked rice for serving Any type of rice

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced chicken and cook until browned and cooked through, about 6–8 minutes. Stir occasionally.
  • Stir in the onion, bell pepper, and garlic, cooking until softened, about 3–4 minutes.
  • Add the pineapple and cashews, then pour in the soy sauce. Toss to combine.
  • Cook for another 2–3 minutes, stirring to combine.
  • Season with salt and pepper to taste, then serve over cooked rice.

Notes

Use fresh pineapple for best flavor. For a gluten-free version, swap soy sauce for tamari. Optional ingredients like snow peas or sliced carrots can enhance nutrition.
