High Protein Crispy Garlic Chicken Fried Rice

Ingredients
  

Main Ingredients

  • 1 cup jasmine rice Rinse under cold water before cooking.
  • 2 tablespoons vegetable oil Divided for cooking.
  • 3 large eggs, beaten
  • 1 pound boneless, skinless chicken breast, diced Cook until golden brown.
  • to taste Salt and black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 4 cloves garlic, minced Add the garlic after the chicken has started to brown.
  • 1 cup mixed vegetables (peas, carrots, corn) Optional seasonal variations.
  • 2 green onions, chopped green onions To be added at the end.
  • 1 tablespoon sesame oil For flavor at the end of cooking.
  • 1 tablespoon fresh cilantro, chopped For garnish.

Instructions
 

Cook the rice

  • Rinse the jasmine rice under cold water until the water runs mostly clear, then cook according to package instructions.
  • Once cooked, spread the rice on a large baking sheet to cool for at least 20–30 minutes.

Prepare the eggs

  • In a mixing bowl, beat the eggs with a pinch of salt.
  • Heat 1 tablespoon of vegetable oil in a pan over medium heat, add eggs, and scramble until just set. Remove and set aside.

Cook the chicken

  • Increase heat to medium-high, add remaining vegetable oil, then stir-fry the diced chicken until golden brown.
  • Season with salt and pepper while cooking.

Add garlic

  • Add minced garlic to the chicken and stir-fry for about 1 minute until fragrant.

Add vegetables

  • Stir in mixed vegetables and cook for 2–3 minutes until warmed through.

Combine rice and sauces

  • Add cooled jasmine rice, breaking up clumps, then stir in soy sauce, oyster sauce, and fish sauce.

Return the eggs

  • Fold scrambled eggs back into the rice mixture.

Finish and serve

  • Garnish with chopped green onions and drizzle with sesame oil before serving.
  • Serve hot with chopped cilantro on top.

Notes

Storing leftovers in an airtight container in the fridge for up to 3-4 days. Can be frozen for up to 2 months.
