  • 1 lb cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream or cream cheese Cream cheese will make it thicker.
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Chopped cilantro for garnish

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté for about 5 minutes until translucent.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add shredded chicken, drained white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper into the pot and stir to combine.
  • Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
  • Stir in cream or cream cheese until well incorporated.
  • Ladle into bowls and garnish with chopped cilantro.

Notes

This healthy chili can be refrigerated for 3-4 days or frozen for up to 3 months. Consider topping with diced avocado or shredded cheese.
