  • 2 medium butternut squashes, peeled and cubed
  • 1 head of garlic, roasted
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and sauté for about 5 minutes, or until the onion is translucent and fragrant.
  • Add the cubed butternut squash, roasted garlic, ginger, cinnamon, nutmeg, salt, and pepper. Stir to combine all ingredients.
  • Pour in 4 cups of vegetable broth and increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
  • Using an immersion blender, puree the soup until smooth. If using a regular blender, blend in batches before returning it to the pot.
  • Taste and adjust seasoning if necessary. Garnish with fresh herbs if desired before serving.

Notes

Roasting the garlic adds depth of flavor. An immersion blender simplifies the blending process. To enhance sweetness, consider roasting the squash beforehand.
