  • 1 lb lean ground beef Can substitute with turkey or chicken for a leaner option
  • 8 pieces flour or corn tortillas Choose based on preference
  • 2 cups enchilada sauce Store-bought or homemade
  • 1 cup shredded cheddar or Monterey Jack cheese Or a blend of both for more flavor
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the lean ground beef. Cook for about 5 to 7 minutes, stirring occasionally until it starts to brown.
  • Add the diced onion and cook until translucent.
  • Add the minced garlic, cumin, and chili powder, and sauté for an additional 1 minute.
  • Take a tortilla and spoon a generous amount of the beef mixture onto the center. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat this process until all filling is used.
  • Pour the enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheese.
  • Bake uncovered in the preheated oven for about 20-25 minutes, until the enchiladas are bubbling and the cheese is slightly golden.

Notes

Tips: Warm corn tortillas in a dry skillet to prevent cracking. For richer flavor, roast the garlic before mincing it. Add black beans, corn, or sautéed peppers to beef mixture for more texture.
