  • 2 large sweet potatoes Choose firm, smooth sweet potatoes without soft spots.
  • 1 cup feta cheese, crumbled Use a tangy feta for contrast or a creamy sheep’s milk feta for milder flavor.
  • ¼ cup honey Use a mild wildflower or clover honey for balance.
  • 2 tablespoons olive oil A light, even coating promotes browning.
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish — thyme, rosemary, or chopped parsley) Adds a fresh finish.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the sweet potatoes into 1/4-inch rounds and place them on a baking sheet.
  • Drizzle olive oil over the sweet potato rounds and season with salt and pepper.
  • Bake for about 20–25 minutes, flipping halfway through.
  • Remove from the oven and top each round with crumbled feta cheese and a drizzle of honey.
  • Return to the oven for an additional 5 minutes until the feta is warmed.
  • Garnish with fresh herbs if desired and serve warm.

Notes

Store cooled rounds in an airtight container for up to 3–4 days. They’re best eaten within 24–48 hours once topped with feta and honey.
