Ingredients
  

For the Potatoes

  • 2 lbs potatoes, chopped (Yukon Gold or Russets work well)
  • 4 cloves garlic, minced
  • ¼ cup olive oil
  • to taste salt and pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Chop your potatoes into even-sized pieces.
  • Optional: Microwave the chopped potatoes for 5 minutes to soften them slightly.

Cooking

  • In a mixing bowl, combine the chopped potatoes, minced garlic, olive oil, salt, and pepper. Toss until evenly coated.
  • Spread the potatoes in a single layer on a baking tray.
  • Roast in the oven for about 35-40 minutes, turning halfway through.
  • Once roasted, remove from the oven and garnish with fresh parsley before serving.

Notes

For extra crispiness, soak potatoes in cold water for 30 minutes before roasting to remove excess starch. You can also use canola oil or avocado oil as substitutes for olive oil.
