  • 4 pieces boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 0.5 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes (optional) optional for added heat
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional) adds color and freshness

Preparation

  • Wash and halve the baby potatoes, and mince the garlic.

Seasoning

  • In a bowl, mix salt, black pepper, Italian seasoning, and red pepper flakes. Rub this seasoning blend evenly onto the chicken breasts.

Sautéing

  • In a skillet over medium heat, add olive oil. Once hot, sauté the minced garlic for about a minute, just until fragrant.

Layering

  • Place the halved potatoes at the bottom of the crockpot. Lay the seasoned chicken breasts on top. Pour the sautéed garlic and olive oil over the chicken, followed by the chicken broth and grated parmesan cheese.

Cooking

  • Cover the crockpot and set it on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).

Finishing Touch

  • Before serving, sprinkle with freshly chopped parsley.

Notes

For a different flavor, you can incorporate lemon juice or zest.
