  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced Use fresh garlic for the brightest flavor.
  • 1 cup grated Parmesan cheese, divided Reserve a little extra for topping.
  • 1 cup breadcrumbs (plain or Italian-seasoned) For gluten-free, swap for gluten-free panko.
  • 2 large eggs
  • 1 medium onion, diced Sauté until soft.
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt Adjust if using regular soy sauce.
  • 1 tsp black pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.
  • In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  • Shape the mixture into a loaf form in the greased baking dish.
  • Sprinkle remaining Parmesan on top and optionally add a pinch of paprika for extra flavor.

Baking

  • Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

For mini loaf variations, divide into muffin tins and reduce baking time to 22–28 minutes.
