  • 2 cloves garlic, minced
  • 1 cup ketchup

  • 1 cup shredded cheese (e.g., cheddar or mozzarella)

Prepare the Aromatics

  • Heat a large skillet over medium heat and add a tablespoon of neutral oil or a small knob of butter. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 4–5 minutes.
  • Tip: Cook the onion low and slow for extra sweetness, extend this step to 10–12 minutes for caramelization.

Brown the Meat

  • Add the ground beef to the skillet, breaking it up with your spoon. Cook until browned all over and no longer pink, about 6–8 minutes.
  • Tip: Use a spatula to press and scrape so you get little browned bits for flavor.

Build the Sloppy Joe Sauce

  • Stir in the ketchup, Worcestershire sauce, and a good pinch of salt and pepper. Reduce the heat and simmer for about 5 minutes.
  • Tip: Taste and adjust; a teaspoon of brown sugar can add depth.

Toast the Garlic Bread

  • Toast the garlic bread according to package instructions or preference, either roasting at 375°F for 6–8 minutes or under the broiler for 1–2 minutes per side.
  • Tip: For homemade garlic bread, brush baguette slices with garlic butter and roast until golden.

Assemble and Melt the Cheese

  • Pile the beef mixture generously on the toasted garlic bread slices, topping each with shredded cheese.
  • Tip: Add parmesan or cream cheese for extra richness.

Broil to Finish

  • Place the assembled slices under the broiler for 2–3 minutes until the cheese is bubbly and melted.
  • Tip: If you don’t have a broiler, cover the skillet with a lid to steam-melt the cheese.

Notes

For lighter versions, swap the ground beef for turkey or lentils. Store leftovers in an airtight container for up to 3–4 days, or freeze the filling for up to 3 months. Serve with side salads or roasted vegetables.
