Ingredients
  

For the Bars

  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup butter, softened
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup dried cranberries
  • ½ cup white chocolate chips

For the Frosting

  • ¼ cup cream cheese
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract for frosting
  • 1 tablespoon milk for frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing until fully incorporated.
  • In a medium bowl, whisk together the flour, oats, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring gently.
  • Fold in the dried cranberries and white chocolate chips until evenly distributed.
  • Spread the batter into a greased 9x9-inch baking dish and smooth the top.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until golden brown.
  • Allow to cool in the pan for about 10 minutes before transferring to a cooling rack.

Frosting

  • In a medium bowl, beat together the cream cheese, powdered sugar, 1/2 teaspoon of vanilla extract, and milk until smooth.
  • Once the bars are cool, spread the frosting over the tops and slice into squares or rectangles.

Notes

Store the bars in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Serve with coffee or as part of a holiday brunch spread.
