  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Using fresh eggs can enhance flavor.
  • 1 teaspoon vanilla extract The aroma will make your mouth water.
  • 2 cups all-purpose flour Ensure to whisk with other dry ingredients.
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Mix-ins

  • 3 cups rolled oats For added flavor, consider toasting them.
  • 1 cup chocolate chips
  • 1 cup chopped nuts (optional) Walnuts or pecans pair beautifully.
  • 1 cup shredded coconut (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is smooth and creamy.
  • Add the eggs and vanilla extract to the mixture and blend well until combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Fold in the rolled oats, chocolate chips, nuts, and shredded coconut (if using).
  • Using a cookie scoop or tablespoon, drop the dough onto ungreased or parchment-lined baking sheets.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks.

Notes

Store cookies in an airtight container at room temperature for up to a week. They freeze beautifully for up to three months.
