Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  • Stir in minced garlic and cook for another minute.
  • Add sliced zucchinis and soy sauce to the skillet.
  • Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender.
  • Season with salt, pepper, and red pepper flakes if using.
  • Serve immediately, optionally topped with fresh herbs or lemon juice.

Notes

For meal prep, slice chicken and zucchini in advance. Store separately in the refrigerator. Freezing is possible, but zucchini may soften; undercook slightly before freezing.
