Chicken Shawarma with Garlic Sauce

Ingredients
  

For the Chicken

  • 1 lb chicken thighs or breasts (boneless, skinless) Thighs are juicier, breasts cook faster.
  • 2 tablespoons shawarma spice mix Store-bought or homemade (cumin, coriander, paprika, turmeric, cinnamon, cardamom, black pepper).
  • 3 tablespoons olive oil
  • Salt and pepper to taste

For the Garlic Sauce

  • 4 cloves garlic, minced
  • ¼ cup plain yogurt Full-fat or low-fat.
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For Serving

  • Pita bread or flatbreads For serving.
  • Fresh vegetables (lettuce, tomatoes, cucumbers) For serving.

Instructions
 

Marinate the Chicken

  • In a bowl, combine the shawarma spice mix, olive oil, and salt and pepper. Add the chicken and marinate for at least 30 minutes.
  • For deeper flavor, marinate up to 4-8 hours in the refrigerator.

Preheat and Cook

  • Preheat a grill or skillet over medium-high heat.
  • Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
  • Use a thermometer to check if the internal temperature has reached 165°F (74°C).

Make the Garlic Sauce

  • In a separate bowl, mix garlic, yogurt, lemon juice, salt, and pepper together to make the garlic sauce.
  • For a creamier sauce, pulse in a blender or use an immersion blender until smooth.

Rest and Slice

  • Once the chicken is cooked, let it rest for a few minutes, then slice it thinly.

Assemble and Serve

  • Serve the sliced chicken in pita bread or flatbreads with fresh vegetables and drizzle with garlic sauce.

Notes

Refrigerate cooled chicken and sauce separately for up to 3-4 days. Freeze cooked chicken for 2-3 months.
