Sandwich Components

  • 2 slices slices of bread Use your favorite sandwich bread — sourdough, whole wheat, multigrain, or a sturdy country loaf.
  • 1 breast grilled chicken breast Leftover grilled chicken or rotisserie chicken works great.
  • 1 medium avocado Choose ripe but firm avocados for smooth mashing.
  • 1 cup shredded cheese Cheddar or mozzarella work well; feel free to mix cheeses.
  • Salt and pepper to taste
  • 1 tablespoon Butter for grilling Softened butter spreads more evenly.

Preparation

  • Grill the chicken breast until fully cooked, about 6–8 minutes per side, and slice it.
  • Mash the avocado in a bowl and season with salt and pepper.
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of one slice, layer grilled chicken, mashed avocado, and shredded cheese.
  • Top with the second slice of bread, butter side up.

Grilling

  • Heat a skillet over medium heat and place the sandwich in the skillet.
  • Grill until the bread is golden brown and the cheese is melted, about 3–4 minutes per side.
  • Let the sandwich rest for 1 minute before slicing. Cut on a diagonal for presentation.

Notes

Store leftover sandwich components separately. Keep sliced chicken in an airtight container for up to 3 days. Mashed avocado best used the same day but can last up to 24 hours if covered tightly.
