  • 1 cup shredded cheese (such as cheddar or mozzarella) Feel free to mix cheeses for flavor.
  • 4 slices of bread Consider sourdough, whole grain, or sturdy white.

Preparation

  • In a bowl, combine the shredded chicken and mashed avocado. Season with salt and pepper.
  • Butter one side of each slice of bread.
  • On the unbuttered side, place a generous amount of the chicken and avocado mixture, followed by a layer of cheese.
  • Top with another slice of bread, butter-side up.

Grilling

  • Heat a skillet over medium heat.
  • Grill the sandwich until golden brown on both sides and the cheese is melted, about 3–4 minutes per side.
  • Remove from skillet, slice, and serve warm.

Notes

For best results, let the sandwich rest for a minute before cutting. Store leftover sandwiches wrapped in parchment in an airtight container in the refrigerator for up to 2 days.
