Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Slice horizontally for thinner cutlets if desired.
  • 1 cup buttermilk Tenderizes and adds tang.
  • 1 tablespoon Cajun seasoning Adjust to taste for spice level.
  • 1 cup all-purpose flour For dredging the chicken.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying Enough for about 1/2–1 inch depth, or more for shallow frying.

For the Garlic Aioli

  • ½ cup mayonnaise
  • 2 cloves garlic, minced Adjust amount to taste.
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Assembly

  • 4 pieces brioche buns Or your favorite sandwich roll.
  • Leafy romaine lettuce
  • Sliced tomatoes

Instructions
 

Marinating the Chicken

  • In a bowl, combine buttermilk and Cajun seasoning. Add chicken breasts, cover, and marinate in the refrigerator for at least 1 hour (up to overnight).
  • Tip: Marinating overnight makes the chicken especially tender and flavorful.

Preparing the Dredge

  • In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, and pepper. Whisk to combine.

Heating the Oil

  • Heat vegetable oil in a deep skillet over medium-high heat until it reaches about 350°F (175°C).
  • Test by dropping a pinch of flour into the oil; it should sizzle immediately.

Dredging the Chicken

  • Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture.
  • For an extra-crispy finish, double-dredge by dipping back into the buttermilk and then into the flour again.

Frying the Chicken

  • Carefully place chicken in the hot oil and fry for 5-7 minutes on each side, or until golden brown.
  • Check for an internal temperature of 165°F (74°C).

Draining and Resting

  • Transfer cooked chicken to a wire rack or paper towels to drain, and let rest for a few minutes.

Making the Garlic Aioli

  • Mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
  • Adjust seasoning to taste.

Assembling the Sandwiches

  • Spread garlic aioli on the bottom half of each brioche bun.
  • Add a leaf of romaine, a slice of tomato, and the crispy chicken, then top with the other half of the bun.
  • Serve immediately.

Notes

For oven-baked option, preheat oven to 425°F and bake for 18-22 minutes. Adjust seasoning and fat levels as desired.
