Dressing

Instructions
 

Preparation

  • Wash and dry the mixed salad greens thoroughly.
  • Rinse blueberries and drain them well. If berries are particularly large, halve them.
  • Thinly slice the red onion and soak slices in cold water for 5–10 minutes for a milder flavor, if desired.
  • Crumble the feta cheese if not pre-crumbled.

Dressing

  • In a small bowl or jar, combine olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
  • Whisk vigorously until the dressing emulsifies or shake in a jar.
  • Taste and adjust sweetness or tanginess if necessary.

Assembly

  • In a large salad bowl, add mixed salad greens.
  • Scatter blueberries, shelled pistachios, and sliced red onion over the greens.
  • Sprinkle crumbled feta cheese on top.
  • Drizzle dressing over the salad and toss gently.
  • Taste and adjust seasoning with additional salt and pepper if needed.

Notes

Store leftovers in an airtight container in the refrigerator for up to 24–48 hours. Best served fresh. Variations may include different fruits or cheese types as well as adding protein for a heartier meal.
