Thai Peanut Turkey Burgers

Ingredients
  

For the Turkey Burgers

  • 1 pound ground turkey
  • ¼ cup breadcrumbs Can use regular or panko breadcrumbs.
  • 2 tablespoons green onions, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce Can be replaced with reduced-sodium versions.
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 burger buns toasted

For the Peanut Sauce

  • cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sriracha Optional, adjust to taste.
  • 2 to 3 tablespoons warm water For mixing into the sauce.

For Toppings

  • 1 cup shredded carrot
  • 1 cup cucumber, thinly sliced
  • ½ cup fresh cilantro leaves
  • ½ red onion thinly sliced

Instructions
 

Preparation

  • In a large mixing bowl, gently combine ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and black pepper until just incorporated. Don't overwork the meat.
  • Divide the turkey mixture into four equal portions and form into uniform patties, about 3/4-inch thick. Make a slight indentation in the center of each patty.

Cooking

  • Heat a grill or skillet over medium-high and lightly oil the surface before cooking.
  • Grill or pan-cook patties for 5 to 6 minutes per side until fully cooked with an internal temperature of 165°F.
  • Rest patties for 3–4 minutes after cooking to retain juices.
  • For oven-baking, preheat oven to 400°F, place patties on a parchment-lined tray, and bake for 18–22 minutes, flipping halfway through.

Peanut Sauce

  • In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha. Gradually blend in warm water until smooth.

Assembly

  • Spread peanut sauce on the bottom of each toasted bun, place a turkey patty, drizzle with more sauce, and top with carrot, cucumber, cilantro, and red onion. Cover with the top bun and serve immediately.

Notes

Use regular or panko breadcrumbs. Adjust sriracha for spice tolerance. Store leftovers in an airtight container and refrigerated sauce separately.
